Easy, delicious, and versatile, this recipe is an awesome staple for a vegan or vegetarian diet. You can mix up the recipe to fit pretty much any meal. Ingredients: 1 medium sweet potato, cooked 1 cup quinoa, cook according to package, 1/4 cup oats 1 egg (or flaxseed and water for a vegan option) 1/2 tsp paprika 1/2 tsp minced garlic (or powder) 1/2 onion powder 1/2 tsp salt 1/2 tsp pepper
Directions: 1. Preheat oven to 350 degrees and grease cookie sheet. 2. Combine all ingredients until evenly mixed. 3. Roll mixture into balls and place on cookie sheet (I usually try for a golf ball size). 4. Bake for 20-25 minutes depending on you desired crispiness. 5. Mix meatballs with sauce of your choice or enjoy them just as they are. I highly recommend BBQ sauce with this recipe- atop a spinach salad… mmmm!
