Honestly, is there anything the mighty chickpea can’t do?
1 can chick peas, drained and rinsed
1/2 cup apple, diced
1/2 cup chopped celery
1/4 cup red onion, diced
1/4 cup dried cranberries
1 Tbsp. mayo
2 tsp. mustard
handful of chopped almonds or pecans
a dash of dill and garlic powder to taste
1. Mix all ingredients together, slightly mashing the chickpeas.
2. Enjoy mixed into a salad, as a sandwich filler, or just by the forkful!
