Black sticky rice (or black glutinous rice) is a naturally sweet, dark rice (dark purple much more than black) that has both fiber and loads of antioxidants – which only makes this baked rice pudding extra fulfilling to eat.

You can cook Thai black sticky rice on your stovetop or in your slow cooker or rice cooker. You will be astonished at the special taste of the rice in blend with the coconut milk. Add a dab of coconut cream on prime (alternatively of whipped cream), and you have a healthier dessert which is quite delicious and guilt-free!

Ingredients

  • 1 cup rice (black glutinous)
  • one/four cup sugar (brown or substitute maple syrup)
  • 1/four teaspoon salt
  • one one/two cans coconut milk
  • 1 1/2 cups water
  • 3 eggs
  • For the Topping:
  • one dollop coconut cream
  • one dollop whipped cream (optional)

Stovetop Technique

Soak the rice overnight, or for at least six hrs (otherwise the rice will consider all day to cook).

Area drained rice in a pot together with brown sugar, salt, one can coconut milk, and all the water. Boil half-covered until finally the liquid has been absorbed and rice is soft to chew. (If essential, add 1 cup a lot more water and proceed cooking until rice is tender.)
